Chicken

One afternoon Nan was investigating the possibility that I may like to have some chicken with my rice. Well, she knows that I like barbecued chicken with sticky rice and that sweet chili sauce.
But this time it was going to be cooked Isaan style. I was in for a surprise, and the end result was actually quite delicious as usual when she cooks something.
First off, she killed a couple of chickens, and ripped the feathers off. Then stuffed the inside with something that looked like grass to me, but they where herbs or some kind of spicy stuff. I don’t have a clue, so please forgive my inaccuracy.
She then filled and empty Lao Kao bottle half full of water, and dug a shallow pit, and stuck the poultry rear end first on top of the bottle. Placed a metal container covering bird and bottle. Then gathered a lot of dry grass, leaves and some coconut shells in a heap on top of the container and set fire to it. She maintained the fire for about 30-45 minutes, checking in between that the bird was not getting burned.

Anytime you like. We need to get rid of some more of those rats with feathers…uh…I mean the poultry.
Are cooking Thai style. Chickens cooked this way are always delicious and we do this out the back yard every now and then. I save up coconut husks for the task and it is better than a traditional roast chicken form an oven I say.
Yes, in the village there are a lot of those scrawny looking rats running about with ruffled feathers.

Isaan food is absolutely delicious. And for most of it you can regulate the spicyness yourself by adding sauces that are mostly on the side. So perfect for a newbie like me
