Since today is the most important day in human history, namely Norway’s national day, I decided to do some home cooking. I have been lazy lately and ordered in, or eaten out.
I like to cook. It’s just that my range is fairly limited. At home it’s no problem. I just go to the supermarket, and buy some freeze dried powder stuff, add whatever the instructions on the back says for me to add, and 15 minutes later, dinner is served.
But here in South Asia it’s not that simple. I have to cook from scratch. And that is time consuming. But today being a special day. Yup, cooking something good was in order.
I love Nan’s chicken and rice. I know how to make the chicken. Just marinate it and stick it in the oven for 45 minutes. The problem is the rice. Again, at home, I just use 5 minute rice. Boil water, add some salt and butter, wait for the water to boil, throw in rice, wait 5 minutes and ready.
Not so here. So I was happy when I found a rice cooker in one of the cupboards. There was no instruction manual. But found those on the net.
Next problem was how much. I poured one cup of rice into the cooker. That did not seem like much. So I added another. Followed by 3 more cups. Yup that should be sufficient I was thinking. Next followed the water, plugged it in.
The chickens was already in the oven, and 45 minutes later I was eating. I also have enough steamed rice to last me a few days, as I forgot that the stuff puffs up.
Anyway, here is the recipe.
Chicken:
6 chicken legs
Dip in a mix of black pepper, salt and milk
Dip in a bowl of crushed corn flakes, the flakes will stick to the chicken leg.
Put them in a your deep pan which you have covered with tin foil.
Put in a liberal amount of margarine in there (yup this is pum puy food)
Stick in oven for 45 minutes
Serve with rice. I also had a bottle of Thai sweet chili dipping sauce to add some spice to it. You know that red sauce they give you in a tiny bowl with your food and Thai buffet places. All in all, it tasted quite good. I think even Nan would be impressed. I’ll leave the dish washing to the maid though ![]()
